Diane and Chuck of Apple Hill Farm always knew they wanted to be farmers. They started off growing apples for wholesale, but mainstream monoculture wasn’t for them. They decided to be different.

They adopted new trellising methods, changed their business model to small buyers and pick-your-own, and replanted their orchard with old varieties of apple tree. Now they grow thirty acres of apples with different tastes, purposes, and callings. One is the Kingston Black we use in our cider. We like to think of it as a unique variety of apple from a unique variety of human.

Steve Cybulski believes in following your own road. His road has led through many twists and turns to a small plot of land in Contookoo, NH, where he now reigns as King of Mustard and the uncrowned Prince of Rhubarb. 

It’s here that he makes his award-winning Blackwater mustard. And it’s here, with the help of seaweed from the coast, that he’s cultivated an exceptionally fertile rhubarb patch. When the rhubarb is ready for harvest, he drives it over. Within a few hours, it’s fermenting in our cellars on its own journey into one of our wines.

It takes a firm hand to tame the wild blueberry. Unlike their cultivated cousins, wild blueberries grow low to the ground and often have to be hand raked. As Todd Merrill of Merrill Blueberry Farm puts it, Wild blueberry season is tough. We work very, very hard, 15 hours a day, 7 days a week with no time for a haircut. 

Todd left the corporate world behind and returned to the family farm to wrangle these small wayward berries, genetically complex and rich in flavor. A pound of them goes into each of our bottles of blueberry wine.
