Ken will be bottling a special batch of mead called Flower Power. It is a small, limited batch, of flower infused mead which has been barrel aged since late 2018. This mead is based on our 2015 Three Honey wine infused with local wild hops, wild elderberry flowers, day lily flowers, and stag horn sumac flower comes, all hand harvested by Ken in the summer of 2018. We use a gravity-fed, six-spout filler and the mead will go into 375ml bottles and corked.

This coming Friday afternoon Ken will be conducting some bench trials on the blend for our 2108 Hermitage.  A bench trial is a process of taking small amounts of the wines and testing possible blends.  Once the best tasting blend is found, then we do the math and blend up the big batch of wine and bottle it.  

Hermitage is comprised of 4 separate wines: elderberry, blueberry, blackberry, and black currant.  Each of these wines was fermented separately and have been aging in French Oak barrels since the Fall of 2018.  The blending process is a lot of fun and it is always amazing how a very small difference in the ratios of the different components can greatly affect the result.  Join us while we blend and taste, and blend and taste again, searching for the optimal combination.
