South America, specifically Chile and Argentina are fast becoming well known for their excellent vinifera grapes and wine. In fact, their Cabernet is more akin to the fine cabernets of France due to the less hot growing conditions as those found in California: less heat, less sugar at harvest, less alcohol in the finished wine, greater depth of flavor and balance. This wine was aged in new oak to add a pleasing vanilla component to the wine. Prior to bottling, a little of our 2011 Chilean Carmenere was added for additional fruit flavors/mid-palate structure. This wine is drinking fine now at release, but will age and reach peak depth and balance of flavors in 2-5 years.
